Derived from the ancient Sanskrit word for 'bowl', JAAN is an intimate, 40-seat restaurant dedicated to showcasing the finest in modern French cuisine in Singapore. The view from the 70th floor is jaw-dropping, matched only by the wittily presented and immaculately executed dishes emerging from Chef Julien Royer's kitchen.

French-born Chef de Cuisine, Julien Royer joined JAAN in 2011, following the departure of the acclaimed Andre Chiang. Since then, his innovative culinary creations, that combine modern cooking techniques with cultural tradition, have rapidly returned the 70th floor restaurant to its status as one of Asia's hottest destinations.

Royer will formally accept this prestigious award on behalf of JAAN at the inaugural Asia's 50 Best Restaurants awards ceremony on 25 February 2013, at Marina Bay Sands, Singapore. 'The One To Watch' title is awarded to an establishment within the inaugural Asia's 50 Best Restaurants list that the organisers believe has made a significant impact in a relatively short period and that has the potential to rise further up the rankings.

Inspired by his upbringing in Auvergne, Central France, Royer sources his ingredients from the best suppliers all over the world, always in search of the freshest ingredients with a pure organic taste. Born into a family of farmers, he was taught to appreciate and value the beauty of seasonal produce, and saw how each animal, vegetable and fruit would reach its prime at different times of the year.

As a young chef entering the culinary world, Royer sought out other chefs who shared the same values, working under critically acclaimed names such as Michel Bras at Laguiole and Bernard Andrieux. Both Bras and Andrieux had a profound influence on him, reinforcing the beliefs from his upbringing and highlighting the importance of the purity of ingredients in every dish.

Royer went on to join the team at the eminent Greenhouse restaurant in London, before moving on to be the Chef de Cuisine of Brasserie Les Saveurs at the St. Regis, Singapore, before his appointment at JAAN.
