The "Four Major Chinese Cuisines" journey will begin in Hunan. Hunan cuisine was established in the Han Dynasty (about 2,100 years ago). It puts emphasis on savory, sour, and spicy flavors. Due to the differences in geography, Hunan cuisine gradually developed flavors based on three local styles of the "Xiang River valley", "Dongting Lake region" and the "Western Hunan mountainous area". The Western part of Hunan has many mountains and valleys which facilitate the growth of bamboo shoots and are rich sources of wild games; the Southeastern area of Hunan is hilly, where stock raising and planting are highly developed; Situated at Northern Hunan, the famous Dongting Lake Plain which is also named the "land of plenty", is reputed for its freshwater fish. Hunan's climate is warm and humid as it is close to the Yunnan-Guizhou mountain area. Their chefs usually prepare some side dishes with strong flavors, such as crunchy sauerkraut, as well as the hot and spicy chili and prickly ash peel, to release body humid and enhance guests' appetites. From 1 March to 30 April 2013, guests of StarWorld Macau can have the chance to savour a variety of specialties from this special gourmet region of China.

"Wok-fried Sliced Chicken with Chili and Garlic" is a traditional Hunan dish. As a signature dish of Hunan cuisine, it highlights the savory, sour, and spicy features of this style. The chefs at Sensations have especially selected young female chickens in order to present a soft and tender texture. The chicken is lightly fried before stewing before adding the sour and spicy sauce that makes the dish an irresistible temptation to its guests.

The chefs use a traditional cooking method from Hunan's Tujia people to cook "Braised Spicy Pork Intestines with Assorted Peppers & Onion in Hot Plate". Fresh pig intestines are boiled in prickly ash peel soup to eliminate the smell and then deep fried for a crispy texture. After that, the chef will put the fried pig intestines into a pan with chopped sauerkraut and green onions for a final quick firing to enhance the overall flavor before serving.

As a "land of plenty", Hunan is well-known for its freshwater fish and "Sauteed Shrimps with Assorted Peppers" is acclaimed as "The Best of Hunan". The chef uses a small amount of chili in the dish to enhance the flavor of the shrimps without being too spicy. The shrimps are coated with a shining red colour and the firm and bouncy texture will definitely enhance guests' appetites.

Dried meat is another common ingredient of Hunan cuisine. Hunan style dried meat is slightly different from other styles as it will is smoked using spices such as the shell of peanuts and melon seeds in order to enhance its flavor. The experienced chefs of Sensations carefully cut the dried meat into thin slices. The smoky and savory dried meat is stir-fried with fresh and crunchy Lettuce Stem and chili that makes the dish the best representative of local Hunanese flavor.

This soup is made of a series of precious ingredients including dried scallop and wolfberries and simmered with seasonal vegetable shoots. With the combination of sweet and creamy Taro paste, the light and refreshing taste can counterbalance the strong and spicy flavor of the other dishes.
