Executive Chef of StarWorld Macau Joe Chan has handpicked some premium honey and designed a series of dishes for the season. Without needing to search far and wide, one finds an assortment of dishes using honey as an ingredient provided at "The Honey Carnival" buffet in Temptations at StarWorld Macau.

In Chinese and some of the Western beliefs, honey is regarded as of high nutrition. In Li Shizhen's Compendium of Materia Medica written in the 16th century, honey helps in eliminating unwanted heat in the body, rehydration and even pain relief. While from a Western perspective, honey is known to be rich in glucose, which is easily absorbed and helps replenish energy very quickly. Other than that, honey contains dozens of kinds of minerals, vitamin and amino acids. These nutrients help to stimulate metabolism, nourish the skin, defer senility and promote maintain wellness.

(1) French Trefle Honey Roasted Baby Pigeon

Hailing from Franche-Comte, the eastern part of France, the honey used in this dish looks a yellowish, cream-color and gives off a sweet aroma. It is rather mild in both saccharinity and acidity.

With these characteristics, Executive Chef Joe picked roasted baby pigeon with its crispy skin and tender meat to pair with the mild sweetness. And here is a perfect match for pleasing relish!

(2) Fresh Scallops & Avocado Salad with Walnut, Lime and Italian Sulla Honey

Located on the Mediterranean Sea, Sicily of Italy is a natural place deemed as an emblem of purity. With its soil consisting of volcanic limestone, Sicily produces honey that is especially rich in vitamin and amino acids. It is hence suitable for the busy-as-a-bee urbanites to replenish energy.

This salad dish is made with fresh scallops and avocado. Meanwhile, the natural flavor of the honey feels like it has just been collected from a honeycomb in Sicily with the lingering smell of wildflower. The salad is sweet and yet not too sweet, making it an absolutely healthy and delicious choice.

(3) German Acacia Honey Roasted Salmon Belly Marinated in Ginger and Sweet Soya Sauce

The honey used in this dish comes from acacia, the florescence of which happens only in spring. And therefore this honey is only available in springtime. It is relatively thicker and stickier in nature, hence suitable to make various dishes served hot.

Executive Chef Joe especially recommends this salmon belly cooked with acacia honey that comes from Langnese, a classic German brand since 1927. The distinctive quality and fragrance of the honey, along with the salmon belly that is rich in fat of softness, proves the dish irresistible.

(4) Baked New Zealand Manuka Honey Orange Custard

The Manuka honey from New Zealand is arguably the heavyweight among all the honeys and has been very popular. The extraordinary honey comes from leptospermum scoparium, a shrub native to New Zealand that grows lots of pink and white small flowers. It is famed for its distinctively aromatic sweetness, and the efficacy in strengthening the defense against bacteria.

Unlike ordinary baked custard, Manuka honey adds special flavor and aroma while the orange adds an exclusive taste to this dessert. The blend of flavors tastes of nature, and reminds one of the clean and full-of-greenery country of New Zealand.
