Hunan cuisine (also known as Xiang Cai) is one of the eight main regional cuisines in China, boasting a long history spanning over two thousand years. Originating from Hunan Province in South Central China, it is known for its rich and fiery flavors, through an abundant use of chili peppers and garlic. The cuisine is famed for its elaborate preparation techniques and beautiful presentation, as well as a unique combination of flavors. Sweet, sour, hot and spicy. Delicious dishes such as Maojia Beef and Xueli Hongshao Sanxin will offer diners with truly memorable dining experiences.

The Hunan-themed menu was designed by Chef Chan Chak Keong, the Chef de Cuisine at Sensations. With 25 years of culinary experience in Chinese cuisine, Chef Chan has won several awards, most recently outdoing three-hundred competing chefs to win the first place at the 2012 Macau Regional World Master Chef Championship. Commenting on the special Hunan-themed menu, Chef Chan said: "Hunan Province is a major agricultural region, a 'fertile land of fish and rice'. For this menu we carefully sourced some of the best local produce from Hunan Province. It was also important to us that we use traditional cooking techniques and in doing so we look forward to offering our guests with truly authentic Hunan cuisine."

Pickled vegetables are a popular local staple of Hunan cuisine. Adding to this classic dish, the chef pan-fried the pickled vegetables together with shredded pork tripe and chicken, topping the lot with spicy chili for a truly appetizing dish.

With Hunan cuisine being most renowned for its spicy flavors, the chef selected tender shredded sirloin steak as the basis to this wok-fried beef dish, adding copious amounts of Hunan red peppers and green onions for the pleasure of spicy food lovers.

Ham is one of Hunan cuisine's star ingredients. For his Hunan ham dish, the chef carefully selected premium pork. Once lightly salted and left to dry out, the pork is smoked with chaff and orange peel for a greater flavor. The ham is then cut into strips and stir-fried with sweet and crispy lettuce, making for one of the menu's most classic rural dishes.

Pork Stewed in Soy Sauce

In Hunan, red-braised pork is inseparably bound with the memory of the former Chairman Mao Zedong, the founder of the People's Republic of China, as it once was one of his favorite dishes. Divided into large cuts, pork belly is successively steamed with rock sugar, cinnamon and star aniseed and deep fried, the belly cuts are then placed in a pot and braised with yet more spices such as fermented soya beans, until the fatty part of the meat is soft and jelly-like. The result is an irresistibly tender serving of sweet, aromatic pork for a truly outstanding dish.
