Master chefs shine at StarWorld restaurants

The chefs in StarWorld are "Crouching Tigers" in the culinary world. Executive Chef Joe Chan, who has been in the industry for more than 30 years and is currently one of the few Chinese Executive Chefs in Macau. Specializing in Portuguese, German, Italian and French cuisines, Chef Joe is committed to creating a wide variety of European delicacies for his guests. He has served many celebrities and politicians such as Luis Figo, former captain of the Portuguese national football team, and several Governors of Macau. Chef Chan Chak Keong, the Chef de Cuisine of Sensations, is responsible for the Chinese cuisine and banquets at the hotel. The unique cooking style and philosophy from the chefs are demonstrated in the StarWorld Chef Parade Menus: Chef Joe features Roasted Duck German Style for the Temptations' menu, showcasing his respect to the tradition and his own innovation. Chef Joe has sent his teammate to Germany for inspiration during the creative process for the dish and spent months perfecting the recipe. To enjoy this dish, one should start with duck breast, followed by the drumsticks. The inside of the bird is filled with potato mash and vegetables, and the roasting provides a great texture with crispy skin and tender meat. The dish is also departure from the traditional Chinese roasted duck. The menu from Sensations highlights Chef Chan's notable achievement in persistence in perfecting the dishes. The Roasted Pork Belly, which is a seemingly local Macanese dish, is perfected by Chef Chan with an ancient charcoal roasting cooking method. The tempura from Inagiku is fried according to a 100-year-old recipe using sesame oil to deliver the crispness and non-greasy taste. The perfect oil temperature for frying tempura is determined by the tempura batter - if the batter sinks, the temperature is too low; if the batter flows, the temperature is too hot. Only the perfect temperature will allow the batter to be fried in the middle of the sesame oil. Little wonder tempura dishes have been regarded as the touchstone for gourmet Japanese culinary art.
