Taihu Lake is the third largest freshwater lake in China, with a continuous water supply, stable quality and high nutrition and the Taihu Lake crabs (Chinese mitten crabs) nurtured there are famed for their roe as well as the meat quality.

Fried Shanghainese Rice Cake is a traditional home dish from the Yangtze area. The chewy texture of the rice cake can be served as a side dish or a staple food. Jade Garden uses the rice cakes made from Yangtze glutinous rice flour mixed with water. The portions of flour and water are strictly controlled in order to create a perfect texture. The chef marinates the rice cakes in chick broth, then cools the mixture with iced water, then fries them with crab meat. A traditional dish that seems so simple showcases the skills of the chefs.
