"Not all extra virgin olive oils are created equal," said Paula Lopes, Bertolli's Chief Quality Officer, who has been sampling olive oils for over 20 years. "Our sampling team travels around the world to find producers worth pursuing that meet our internal standards which exceed the legal requirements."

The Bertolli Way

Bertolli intentionally blends 100 percent of its olive oil to arrive at a product that is both consistent in flavor and quality. The company samples thousands of oils from producers around the world each year and only the best are selected as possessing the flavor and quality characteristics suited for the brand's final blend. In 2018 alone, Bertolli sampled more than 20,000 oils, of which only 20 percent met the company's high standards.

  • A 'healthier' crop: Bertolli pays farmers a premium to crop earlier and to get the best-possible batch of olive oils. These contain more antioxidant-rich polyphenols than late-harvest olive oils.
  • All in the taste: The team tastes every sample to determine what is suitable for the Bertolli brand, classifying various oils by their various flavors and characteristics.
  • Blending for the best: The team specifically seeks out products that possess desirable characteristics for blending, like fruity tasting notes. They also evaluate aftertaste along with potential bitterness, spiciness and vegetal notes to determine how to blend the sample with complementary oils.  Those with defects – either in taste or smell – do not make the cut.
