Compared with other hot and spicy Chinese cuisines, Sichuan cuisine highlights "mala" flavor, a spicy flavor that has a numbing effect on the lips. With years of experience, Sichuan chefs have summarized their own seasoning recipes as emphasizing the use of Sichuan peppercorns and chili. The recipes focus on the selection of species, dosage control and the effect of temperature on taste. In addition to other local seasoning ingredients, Sichuan cuisine has spiced up its one-of-a-kind flavor compared to other Chinese cuisines. This is a classic Sichuan cuisine. Chef Chan Chek Keong, Head Chef of Sensations at StarWorld Macau, explained that firstly, the chicken is marinated in a sauce that is brewed with Sichuan traditional spices such as Sichuan peppercorns and star anise. In order to create a nice texture, the chef bathes the chicken in iced water until it is cold. Served together with intensely-flavored secret mala sauce, it provides guests with an amazing tastebud-opening experience.

Most traditional Sichuan beef recipes place an emphasis on slicing technique, including dishes like Lamplight Beef and Zhang Fei Beef. Stir-fried Sliced Beef with Chili, Garlic and Pepper is a traditional farm house dish. The chef at Sensations seasons the paper-thin beef by using traditional blends that include Sichuan peppercorn and star anise. Then the beef is quickly fried with garlic, onion and ginger. It is an appetizing dish to be served with rice.

Braised Pork Intestines with Duck Blood and Ox Stomach in Sichuan Style

Originating from Chengdu, this is another classic Sichuan dish that uses duck blood as the main ingredient. Firstly, the chef prepares a pot of spicy red-oil beef soup made with different parts from an ox with spices such as Sichuan peppercorn and star anise. Then, raw duck blood and a large amount of vegetables are mixed into the soup. The chef carefully keeps the cooking time of the duck blood at around 10 minutes in order to deliver an excellent texture and taste. If the blood is undercooked, the flavor of the beef soup cannot be fully penetrated into the blood; if the blood is overcooked, the texture of the soup will be ruined.

This dish is evolved from a famous Sichuan dish, "Sauteed Diced Chicken with Chili Pepper". In Sichuan province, several tributaries of the Changjiang River come together and the waterways abound with freshwater delicacies. The chef at Sensations specially uses fresh shrimps from the tributaries instead of chickens to enhance the local version of the dish. In order to preserve the fresh and crunchy texture of shrimps, the chef needs to control the oil temperature between 90 and 100 degrees Celsius when frying them. With traditional Sichuan style ingredients, including fresh onions, chili, Sichuan peppercorns, salt and pepper, the chef brings an innovative yet traditional Sichuan flavor to the guests.
